Abstract

The utilization of moringa leaves as a functional food source remains limited within local communities, where they are commonly consumed only as traditional vegetables. Therefore, product innovation that enhances both nutritional value and economic potential is needed. This community service program aimed to improve the knowledge and skills of the PKK’s group in Suci Village, Panti District, in processing moringa leaf extract into nutritious dry jelly candy, while also introducing an informative and attractive product packaging design. The program was carried out through the development of a tutorial video demonstrating each production stage including extraction, formulation, molding, and drying accompanied by guidance on product quality evaluation and the creation of packaging that highlights visual identity and potential nutritional information. The results show that the produced dry jelly candy exhibited good physical characteristics, acceptable taste, and proper texture, with potential content of vitamins A, C, E, and antioxidants. The designed packaging successfully enhanced the product’s visual appeal and clarity of information, thereby supporting its marketability. Online dissemination through YouTube received positive engagement, reflected in viewer responses and interaction. This program concludes that moringa-based jelly candy innovation combined with packaging design development effectively strengthens community nutrition literacy while offering opportunities for local economic empowerment.
